Conseils d'utilisation :
En chocolaterie : intérieur ganache bonbon, moulage fin, enrobage
En pâtisserie : ganache pâtissière, biscuit, mousse, décor
En glacerie : sauce, glaces et sorbets
Courbe de température : 40-45°C -> 25-26°C -> 29-30°C
Ingrédients : sucre, beurre de cacao, poudre de lait entier, pâte de cacao, lait écrémé en poudre, sucre caramélisé 1,5%, émulsifiant : lécithine de soja, arôme, épices, arôme naturelle de vanille.
